DEATH BEFORE DECAF?

Caffeine-free coffee is trendy. But how do natural methods differ from Swiss Water, CO2 and ethyl acetate? Which chemicals should definitely not be present in 'decaf'? When does a decaffeinated coffee taste good? What is important when preparing it as an espresso or in a filter? My research and tests take me into a world that is still largely unknown even to coffee professionals. My deep dive for crema magazine also shows that many coffee roasters are coming up with great decaf coffees that are easy to prepare and virtually indistinguishable from regular coffee. Participation in the Q Grader course

In March 2024 I accompanied prospective Q Graders on their way to the most difficult sensory test in the coffee industry on behalf of crema magazine. As you can easily see from the picture, I myself had a lot of fun evaluating the coffee. The red glasses are put on for a triangulation test. Six sets, each with three coffees, are put on. Each set has a coffee that tastes different compared to the other two. The space glasses are used to select the outlier not from the coffee color, but only by tasting.

Coffee tour to Panama

My two-week coffee tour in January 2024 took me to the world-famous coffee region of Boquete, Panama. The Arabica variety 'Gesha' is particularly well known, and finds ideal growing conditions there – at the Baru volcano. The Hacienda La Esmeralda introduced the coffee in 2004, which tastes of stone fruits and jasmine, sparking a veritable hype around the variety that continues to this day. At a coffee auction in September 2024, a South Korean coffee company paid a whopping $13,518 for a kilo of Gesha green coffee by Lamastus Family Estate (Boquete).

Interview with James Hoffmann

It's not every day that you get a coffee poured for you by James Hoffmann himself. In October 2023, I had an interview opportunity with Mr. Coffee Himself at Square Mile Coffee Roasters in London. The interview is published the first two issues of 2024 in the German crema magazine . For me personally, James Hoffmann had important answers on the topics of water, pressure profiling and WDT tool. And, typically for James Hoffmann, he has opened up numerous new rabbit holes. Of course he has, because behind every coffee door are at least three new ones.
